The VMS versions are entirely made of stainless steel, unlike the VM versions where the machines are made of stainless steel except for the aluminum chamber.
The three main gases used for modified atmosphere packaging are as follows:
- Nitrogen (N2): an inert gas that does not react with other substances. This gas is an ideal base as a substitute for air.
- Carbon Dioxide (CO2): reduces microbiological activity and oxidation.
- Oxygen (O): necessary for the preservation of products with high air content, to reduce bacterial growth or to preserve the color of meat in cases where vacuum packaging cannot exceed 25%, thus avoiding the risk of explosion.
